It is a lot easier to go straight to the goal with a good plan—all you need to do is to stick to it or sometimes modify it to better suit the current situation. Creating an indie game, like every other big creative project, needs a plan to keep the whole process under control and don't plunge into chaos.
Good planning and tracking allow you to see how much creating tasks take (and i.e. outsource them), what's the progress, what's left to do, and so on.
